Spring brings us blooming flowers and asparagus! Asparagus is green – my favorite color -, crunchy, full of nutritional facts and D E L I C I O U S. That being said, I don’t need to write much about this dish. It’s fresh, fragrant, colorful, easy to make, savory, nice textures, children like it  and it’s vegan ❤

Serves 4 as a main dish or more as a side

Ingredients:

For the pasta

  • 500 gr. pasta
  • 500 gr. fresh asparagus
  • 150 gr. cubed vegan feta cheese
  • 10 halved cherry tomatoes
  • ¼ bunch chopped parsley
  • 2 tbsp cappers
  • 1 lemon zest
  • 1 spring onion finely chopped
  • 2 tbsp extra virgin olive oil

For the dressing

  • 1 garlic clove
  • 2 lemons juiced
  • 80 ml extra virgin olive oil
  • 1 tbsp mustard
  • salt and fresh ground pepper to taste

Preparation:

Boil the pasta in plenty of salted water according to the instructions on the package.

Strain the pasta, place it in a large bowl and mix with 2 tbsp of olive oil.

Cut the hard base of the asparagus and blanch for 3–4 minutes until they turn bright green.

Remove the asparagus from the boiling water and shock in ice cold water.

Strain again, dry them, cut in small pieces and add them to the pasta bowl.

Add to the bowl the vegan feta cheese cubes and the veggies, except the garlic.

In a small mixer, combine the dressing ingredients and process until you have a fragrant creamy dressing.

Mix the dressing in the pasta bowl and serve.

In Greece vegan feta cheese is very easy to find during the great Easter fast. I’m not sure were people abroad can find it but don’t worry. This dish works well with any other vegan cheese but your best bet is tofu. If there is time, marinate it a bit, and then lightly fry or roast.
Apart from the “cheese”, you can add or replace the other ingredients as well. Don’t like parsley? Dill works as well. Don’t like capers? Leave them out. Maybe replace with olives? Don’t have cherry tomatoes? Sundried tomatoes are fine. Don’t want onions? Use chives. Don’t have spring onions nor chives? Mince a small onion. Even the asparagus can be replaced with broccoli…but I didn’t say that 😛
